This product is recommended for those who love nature and love organic foods. In one phrase, this product is "organic gyokuro". Mino Shirakawa is the only organic natural gyokuro sencha. Further, this is the finest one we use only the first picked tea leaves in the season.

Gyokuro is a literal translation of the honorific title of sencha, which means "gem-like dew" and means sencha with the best taste since ancient times. Gyokuro which produced in low land usually consumes nitrogen fertilizer because it requires a large amount of nitrogen for producing umami ingredient. As a result, it usually exceeds the amount of fertilizer used according to the organic standards.

 

However, this tea leaf from Mino Shirakawa, which has the highest altitude of 800m in Japan, is located on a steep slope and is basically a place where pesticide-free cultivation is popular. It is the best sencha made from natural tea leaves that grow in the same soil, the same climatic conditions, and the same water quality as the best architectural wood "Hinoki" used in only wooden palaces. The fog from the river climbs and blocks the tea trees from excessive sunlight. Then, the tea tree suppresses the production of bitterness, and produces umami. In addition, the temperature difference during the day due to the high altitude stores the umami ingredients in the tea leaves. This is why it is called a miracle terroir. In the samurai era, the rare tea leaves harvested here were not sold to the general public, but were presented to courts and generals. This area was the royal demesne. The word organic has become widespread throughout the world in recent decades, but Mino Shirakawa tea has been an organic farming method for 1200 years.

 

This area has been selected for the "Most Beautiful Villages in Japan" award. Mechanization is not possible to maintain tea plantations on steep slopes of over 30 degrees, so local farmers' unions take the time and effort to maintain it. It is by no means the effort of a single farmer. Earnest farmers work together to maintain this miraculous terroir and beautiful landscape for generations.

Mino Shirakawa Sencha might not Instagram by itself alone. But do you want to value your personality? Since it is cultivated by taking advantage of the blessings of nature such as the sun, water, land, and living things without relying on chemical fertilizers and does not use chemically synthesized components, you can take naturally  the tea leaf ingredients. It can be used as a daily beverage. 

 

Extract  Deliciously

The best extraction method is cold water extraction. Soak in cold soft water for at least 15 minutes. It is delicious even if you brew it in cold water the night before and chill it in the refrigerator until the next morning. This is because umami is well extracted below 60 degrees Celsius. We may also extract even with ice water. Once extracted, umami will not break even if it is reheated. This method is recommended when you want to drink warm sencha.Extracting well is very easy if you understand the theory. This umami taste brings you the best relaxation.

 

Paring

Do you think sencha is to be drunk with Japanese food? That is not correct. Japanese people often eat Chinese food and Western food. We enjoy foods around the world on a daily basis, not just in big cities such as Tokyo and Osaka.   • Japanese green tea, unlike black tea and Chinese tea, is categorized into non-fermented tea, and is a beverage that you can enjoy by extracting the components. The best before date is actually effective for more than 2 years because it is sealed and packaged, but care must be taken since oxidation after opening will impair the flavor and reduce the active ingredients unique to Japanese green tea. Oxidized green tea components change to fermented tea components like black tea. Storage in cans, such as those found in Chinese tea shops, is not favorable. It is best to seal unused parts after opening and store them in a refrigerator if possible. The temperature does not need to be overly concerned, but be careful with oxidation.

     

    If possible, extract with soft water. Hard water is good for enclosing umami taste in meat, while soft water is effective at extracting ingredients into water. In our experiments comparing hard water and soft water, extraction with hard water has a beautiful color, but it does not smell and has less umami components, making it harder to pass through the throat.

     

    This third note is very important. This means that the components that are extracted vary with temperature. It is recommended generally that umami, a component of high-quality tea, be extracted at around 60 degrees. The simple rule of thumb is that it is not difficult to make the proper temperature right by pouring 2/3 of boiling water and 1/3 of cold water. Umami can also be extracted with cold water. In our experiments, we were able to extract a satisfactory state in 10-15 minutes. Umami taste will not be broken if the temperature does not exceed 80 degrees even if the green tea extracted with cold water is heated in a microwave oven. When one cup of cold water is heated in a 500W microwave oven, it depends on the material of the cup, but about 60 seconds is OK. 

     

    We know that most non-Japanese drink habits of green tea with sugar. However, Japanese people basically do not add sugar to sencha. It may simply be a traditional practice that has long been used as a medicine. We respect local customs. But try a green tea without sugar.

     

    For Japanese snacks such as onigiri (rice ball) and ochazuke (rice with green tea soup), tea leaves can be finely chopped and used as a topping material. It is better to add salt lightly because the tea leaves themselves have no taste. Even in that case, can use the second and subsequent tea leaves. It is up to you to match the tea leaves ingredients to the dishes of each country and your cooking style.
